Banana Bread Recipe


This is our favorite time of year to bake fresh banana bread to serve with breakfast or fresh from the oven as a late afternoon snack.

Our special recipe involves adding fresh pure maple syrup for extra moist and delicious Banana Bread.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dark brown sugar
  • 4 tablespoons fresh, pure maple syrup
  • ½ cup butter plus a heaping tablespoon
  • 2 ⅓ cups mashed overripe bananas
  • 2 large organic brown eggs, beaten

Instructions:

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan with a heaping tablespoon of slightly melted butter.

Use 2 separate mixing bowls and an electric mixer:

Step 1: Combine flour, baking soda, and salt in a large bowl.

Step 2: Beat brown sugar, pure maple syrup and butter with an electric mixer in a large bowl until smooth.

Step 3: Stir in eggs and mashed bananas and mix them together until blended.

Step 4: Stir the banana mixture into the flour mixture and blend together.

Step 5: Pour the batter into the 9x5 inch greased loaf pan.

Step 6: Bake in the preheated oven for approximately 55 minutes to an hour. Test with a toothpick.

Step 7: Remove pan from oven and let cool for ten minutes before transferring to a wire rack or plate to continue the cooling process.

Step 8: Serve and enjoy! We like to spread Vermont Creamer European Style with Sea Salt Cultured Butter on the warm bread.
