Holiday Recipe: Swedish Rich Cream Coffee Bread
Our next recipe is one of my favorite holiday treats that my mother has been making for many years. These rolls are delicious with a cup of coffee or tea and warm butter and/or jam.
Swedish Rich Cream Coffee Bread
Ingredients:
- 1 envelope of active dry yeast
- 3 1/3 cups of flour
- ¼ cup of warm water 115 degrees
- ¼ cup raw sugar plus a teaspoon
- 1 cup of heavy cream
- ½ cup of butter
- 1/4 cup of evaporated milk
- ¼ tsp. salt
- 3 egg yolks (slightly beaten)
- 2 teaspoons of vanilla
Instructions:
- Stir yeast into warm water to dissolve with one teaspoon of raw sugar and then set aside to allow yeast to increase.
- In a small bowl mix and dissolve cream, evaporated milk, 2 teaspoons of vanilla and the 3 egg yolks and yeast and set aside.
- Save egg whites to brush rolls before baking.
- In a large bowl stir together flour, sugar and salt.
- Cut in butter with a pastry blender.
- Stir the yeast mixture into the flour mixture just to moisten.
- Spread dough with light film of butter to prevent drying.
- Cover bowl overnight or up to four days.
- Preheat oven to 350 degrees, grease muffin tins or use muffin liners and fill ¾ for large rolls.
- Brush with egg white and bake for 20 to 25 minutes until golden brown.
They freeze well too. Enjoy!
