Holiday Recipe: Swedish Rich Cream Coffee Bread

Our next recipe is one of my favorite holiday treats that my mother has been making for many years. These rolls are delicious with a cup of coffee or tea and warm butter and/or jam.

Swedish Rich Cream Coffee Bread

Ingredients:

  • 1 envelope of active dry yeast
  • 3 1/3 cups of flour
  • ¼ cup of warm water 115 degrees
  • ¼ cup raw sugar plus a teaspoon
  • 1 cup of heavy cream
  • ½ cup of butter
  • 1/4 cup of evaporated milk 
  • ¼ tsp. salt
  • 3 egg yolks (slightly beaten)
  • 2 teaspoons of vanilla

Instructions:

  1. Stir yeast into warm water to dissolve with one teaspoon of raw sugar and then set aside to allow yeast to increase.
  2. In a small bowl mix and dissolve cream, evaporated milk, 2 teaspoons of vanilla and the 3 egg yolks and yeast and set aside.
  3. Save egg whites to brush rolls before baking.
  4. In a large bowl stir together flour, sugar and salt.
  5. Cut in butter with a pastry blender.
  6. Stir the yeast mixture into the flour mixture just to moisten.
  7. Spread dough with light film of butter to prevent drying.
  8. Cover bowl overnight or up to four days.
  9. Preheat oven to 350 degrees, grease muffin tins or use muffin liners and fill ¾ for large rolls.
  10. Brush with egg white and bake for 20 to 25 minutes until golden brown.

They freeze well too. Enjoy!
